Beauty Inside Your Body

Hello Everyone! 

On Thursdays I am going to share a Healthy Recipe with you gals (and guys). I am always trying to eat things that are yummy but good for my body too. 



                                So here is a Healthy Banana Bread that is AMAZE-balls..

 
Ingredients: 

1 1/4 cups smashed ripe banana (did you know that bananas are an energy food.. so don't pass those bananas up!)
3 free range organic eggs (don't worry if you don't have organic just use whatever eggs you have) 
2 tbs raw honey or organic maple syrup
1 tsp vanilla 
1/4 cup coconut oil 
half teaspoon ground cinnamon 
1/2 tsp baking soda + 1 tbsp lemon juice
1 cup almond meal 
1 cup oat flour (made my own with a coffee grinder + oats)
1/4 cup ground flaxseed or chia seed (if you don't have flaxseed use 1/4 cup oat flour)



Preheat your oven to 320F
Combine smashed banana, honey, coconut oil, cinnamon, vanilla, eggs, bicarb and lemon (the lemon activates the baking soda) I blended mine in my Vitamix but you can mix by hand. 
Add the flours (almond, oat and ground flaxseed) Mix well!!
Spray a loaf pan and spoon mixture in pan.

Bake for 45mins to an hour (when you check to see if its done put a toothpick in the center and you will know when its done when that toothpick comes out dry)

Cover the top with foil if the top is becoming too brown. 

Remove from the oven and allow to cool before you take it out of the loaf. 
You should have at least 12 pieces but that depends on how big your pieces are.

Make sure and keep the bread in the fridge and it will keep for up to 1 week. 

My favorite way to eat is with a little peanut butter on top! Let me know how you like your banana bread!
